For the ones who like it colorful and healthy… you should definitely try this summer paella! 🙂

Inspired by my trip to Madrid I wanted to create one by myself!
It is so easy and super tasty!

Paella

what you need

for 4 portions:

  • 250g paella rice (I took risotto rice) 
  • 1 onion + a few green onions
  • 3 carrots
  • 1/2 zucchini
  • 1 red pepper
  • 250g mushrooms (7 medium)
  • 1/2 fennel
  • 125g green beans
  • 2 tsp coconut oil for frying
  • paprika spice
  • saffron
  • salt, pepper
  • fresh chives
    … of course you can variate the ingredients according to your taste (e.g. with peas, tomatoes, artichokes or seafood etc.) 

how to do

  1. wash and chop the vegetables
  2. cut the onions into small pieces as well
  3. heat the oil
  4. first add the onions and then sauté together with the vegetables for two minutes.
  5. add the rice and after a few minutes, when it becomes glassy, deglaze with the broth (the broth should cover the food well)
  6. simmer for about 15 minutes until the rice is cooked (the water should be completely overcooked)
  7. add salt, pepper, paprika powder and saffron. 
  8. at the end I topped everything with fresh chives from the garden, lemon slices and my homemade sprouts*.

MY TIP FOR YOU:

You can make your own sprouts with the so-called seed glass!
For sprouts you can use all type of grains, sunflower seeds, lentils, peas, broccoli seeds and – my favourite – mung beans etc. Most are harvestable after about 3 days. 
You can pimp any dish with it, but it is especially tasty on salads or soups.

Sprouts are full of living enzymes that support our digestion, activate the metabolism and promote repair measures at the cellular level. Last but not least, they are super delicious!
